yellow butter yumminess with chocolate mousse and cream




Ingredients
Butter                       360g

Sugar                       390g
salt                           4g
Eggs                        225g
Cake flour               450g
baking powder       18g
milk                        450g
vanilla essence       8g  

Method
Pre-heat your oven at 180 degrees. Mix the butter, sugar and salt in one bowl. beat the butter mixture until creamy using the creaming method. add your flour and baking powder into one bowl. mix your milk and vanilla essence in one bowl and add to the flour mix. mix your butter mixture with the milk and flour. mix well. add your eggs one at a time to your mixture until your batter is smooth. place in the oven at 180 degrees for 20 to 30 minutes and keep an eye on it. bake until the center is fluffy and fully baked and the top is a beautiful golden brown.

Method
 
Place the chocolate in a heatproof bowl over a pan of gently simmering water (don't let the bowl touch the water). Stir until melted. Remove bowl from heat and set aside to cool slightly.
Place eggs and sugar in a large bowl and beat with electric beaters for 5 minutes, or until mixture is pale, thick and doubled in volume. Fold in cooled chocolate and cocoa powder until combined.
In a separate bowl, whip cream until thickened (be careful not to over-beat). Use a large metal spoon to carefully fold the cream into the chocolate mixture, trying to keep the mixture as light as possible.
